Growing up in Santa Fe, New Mexico helping my mother cook along with my brothers and sisters I developed a love and taste, for authentic New Mexican style cooking, through my years in New Mexico experimenting with traditional and freshest ingredients. We bring that very same traditional flavor here to Colorado with The Roadrunner Food Truck.

Street Taco Inspired Nachos
Seasoned black bean tortilla chips, cheddar cheese sauce, queso Oaxaca, pinto beans, green chile, garnished with pico de gallo, red radishes, crema and your choice of protein.
Chile Cheese Fries
Crispy potato fries topped with cheddar cheese sauce, green chile, shredded cheese, pico de gallo, and crema.
Loaded Street Tacos (GF)
Your choice of protein. Tacos are garnished with pico de gallo shredded lettuce queso cotija, green and red salsas, crisp radishes and lime wedges.
Burrito Bowl (GF)
Your choice of protein. Pinto beans, cilantro rice, green chile, queso Oaxaca, pico de gallo, red radishes, and crema.
Indian Fried Taco
Your choice of protein. Traditional toppings of pinto beans, green chile, queso Oaxaca, shredded lettuce, pico de gallo, red radishes, crema and fiery salsa.
Quesadilla
Crisp flour tortilla filled with your choice of protein and garnished with red radishes, red salsa, and crema.
Chips & Salsa
Seasoned black bean tortilla chips served with your choice of salsa roja or salsa verde.
Fry Bread
Dusted with cinnamon sugar, served with honey.
Strawberry Filed Churros
Dusted with cinnamon sugar, and served with white chocolate syrup.
